Celebrating our rich seasonal flavours... kitchen secrets from our chefs.

We love the changing seasons and the fresh harvest of produce that autumn brings. For our Executive Chef Saverio this month is all about the pumpkin. But not just any pumpkin  it has to be the Italian Delica pumpkin which has arrived in our kitchen with its dark green skin and delicious, dense deep orange flesh. This month Saverio is creating the delicious traditional Emilia Romagna dish of Pumpkin Ravioli. A Sunday lunch favourite in northern Italy – it takes a little time to perfect, but we think Nonna would approve of our take on this fabulous dish. The sweet pumpkin flesh is first baked in the oven with salt, pepper, thyme and garlic. Once cooked the flesh is mashed with ricotta, parmigiano as well as salt and pepper. Saverio fills his home-made pasta with this delicious rich filling and serves simply with butter, sage and more parmigiano. A truly delicious taste of autumn, try it at home or at our Oxford Circus restaurant.

What fantastic feedback we've had from our wine tasting evening at Fox Valley in September hosted by our expert Fabio Boni  it was a great opportunity to explore the story behind our specially curated wines from the vineyards of Piacenza in Emilia Romagna. All the courses were served with their perfect wine partner as Fabio explained the process and history of each glass. Dinner with Des and so much more!

Our special evenings of music, entertainment and of course great food are always popular with our Fox Valley diners, and we have lots coming up in November and December.

We still have some tickets available for our evening with Des Powell on November 4th. Des is a Sheffield born author and SAS veteran who will be telling the compelling story behind

his Times Number 1 Bestseller Bravo Three zero. Tickets are £40 each and include a welcome drink and three course dinner.

Guests are also welcome to bring their own copy of Bravo Three Zero to be signed and there will be a limited number of copies to purchase on the evening.

Paul Pashley will be back on December 2nd with his fantastic show and our Carols by Candlelight event takes place on Thursday 15th December. We're also taking bookings for our popular New Year's Eve party, and we'll be releasing our next Elvis the Legacy dates soon!
